Langues

Culture

    m’hadjeb in Algiers, karantita in Oran: In Algiers, m’hadjeb—paper-thin layered flatbread stuffed with onion, garlic and tomato—is a handheld ritual best eaten hot from a street stall. In Oran, karantita is the equivalent street anthem: chickpea-flour batter baked with eggs and oil, slid into a baguette with harissa and cumin.
